Harsha E. Chacko
Professor and Interim Director hchacko@uno.edu
Ph.D. University of New Orleans
Dr. Chacko has been
a UNO faculty member since 1982 and specializes in hospitality and tourism
marketing and management. He has published articles in journals such as
Tourism Management, Journal of Travel and Tourism Marketing, and the Cornell
Hotel and Restaurant Administration Quarterly.
Dr. Chacko has been involved in several New Orleans area tourism research
projects including studies for the New Orleans Convention and Visitor
Bureau, French Quarter Festival, Inc., the Louisiana Office of Tourism, and
the New Orleans Tourism Marketing Corporation.
Dr. Chacko has worked in the hospitality industry in India, Egypt, the
Caribbean, and the United States. He currently belongs to the Hospitality
Education and Networking Association, the Travel and Tourism Research
Association, and the Council on Hotel Restaurant and Institutional Education
(CHRIE). He was a Fulbright Scholar in 1995-96 and has been reappointed as
a Senior Fulbright Scholar. |

George
G. Fenich Professor, Ph.D. Rutgers University gfenich@uno.edu
Dr. Fenich has had over fifteen years of professional experience in
tourism and hospitality. Since 1985, Dr. Fenich has had teaching
experience in hotel, restaurant and tourism management. He belongs to the
Professional Convention Management Association (PCMA), the Council on
Hotel, Restaurant and Institutional Education (CHRIE) and the Association
for Casino Education.
Dr. Fenich has published refereed articles in a number of journals
including FIU Hospitality Review, The Hospitality and Tourism Educator,
Hospitality Research Journal, Economic Development Quarterly, Hospitality
Education and Research Journal and the International Journal of
Hospitality Management. He has also contributed to several books,
monographs, and chapters. His current research interest involves the study
of the economic impact of convention centers and casino operations.

Bridget M. Bordelon
Assistant Professor (visiting), PhD

Dr. Bordelon’s research
interests include destination images and destination marketing, urban
tourism, cross-cultural perspectives on tourism and travel, and the
application of qualitative and quantitative research methods.
Dr. Bordelon joined the Lester E. Kabacoff School of HRT faculty in
the fall of 2003. She teaches
courses in the area of tourism, which include International Tourism,
Tourism and Hospitality Marketing, and Principles of Travel and Tourism.
She is a member of the Travel and Tourism Research Association (TTRA)
as well as the TTRA south central states chapter, the American
Anthropological Association (AAA), and the Urban Affairs Association (UAA). Currently, Dr. Bordelon is researching and writing on how
visual media images affect visitors’ perceptions of travel destinations.

Mehmet Erdem
Assistant Professor, Ph.D., CHTP merdem@uno.edu
Dr.
Erdem teaches Hospitality Information Technology.
Prior to UNO, he taught at Purdue University and University of
Nevada, Las Vegas (UNLV). He
has earned his Ph.D. in Hotel Administration at UNLV and holds a Bachelor
of Science and a Master of Science degree in Hotel and Tourism Management
as well as a Master of Science degree in Educational Technology from
Purdue University. Dr. Erdem
has also been designated the CHTP (Certified Hospitality Technology
Professional) title commissioned
by the Hospitality Financial & Technology Professionals and
Educational Institute of American Hotel & Lodging Association.
His
research interests include the use and impact of hospitality information
technology, applications of human performance technology, and assessment
of instructional systems. Dr.
Erdem has served the hospitality industry for over thirteen years in
various capacities and areas, including lodging operations, marketing and
sales, human resources, and consulting.
In addition to being on editorial review boards for journals and
conferences, he has published a number of refereed articles in academic
journals and conference proceedings.
His professional affiliations include the
Hospitality Financial and Technology Professionals (HFTP), the Hospitality
Information Technology Association (HITA), the International Federation
for Information Technology and Travel & Tourism (IFITT), the
Council on Hotel, Restaurant and Institutional Education (CHRIE), and the International
Society for Performance Improvement (ISPI).

Chef
Ricardo Fredricks Chef/Teaching Associate,

Prior to joining the University of New Orleans, Chef Fredricks was a
Chef/Instructor for the Culinary Apprentice Program at Delgado College. He
has a M.S. degree from the University of Wisconsin – Stout, Bachelors from
the University of New Orleans, is a graduate of the Culinary Institute of
America, and is certified by the American Culinary Federation as a Certified
Culinary Educator and Chef de Cuisine.
Chef Fredricks’ hospitality industry career
included working for hotels, restaurants and resorts. Chef Fredricks is a
member of the International Food Executives, the Research Chef’s
Association, the Louisiana Restaurant Association (LRA) and the American
Culinary Foundation.

Yvette Green,
Assistant Professor, Ph.D.
Virginia Polytechnic Institute and State University

Dr. Green has professional
experience in restaurant management, banquets and catering, and resort
management. She serves on the Board of Directors of the New Orleans
Chapter of the Louisiana Restaurant Association (LRA) and the New Orleans
Multicultural Tourism Network. Dr. Green also holds memberships in the
Council on Hotel, Restaurant and Tourism Education (CHRIE) and the Club
Managers’ Association of America (CMAA).
Dr. Green has published in the Journal of Hospitality and Tourism Research
and has authored a textbook chapter in the Hospitality and Tourism
Management. She has presented at several hospitality conferences and
published articles and abstracts in the proceedings of these conferences.
Her current research interest involves studying the sales forecasting
process and procedures in the restaurant industry.

Kathryn Hashimoto
Associate Professor, Ph.D.

Dr. Hashimoto researches in the areas of cross-cultural consumer behavior in
advertising, service management, and casino management. She has published
articles on Japanese and American perceptions of advertising and was awarded
a Fulbright Hays Scholar to Japan. Currently, she is researching Russia and
has visited the country on two different occasions to work with
entrepreneurial hospitality projects for Citizens Democracy Corps in
Washington, D.C. She is co-author of three books on casino management. On a
national level, she has had several positions as an officer and committee
member for the American Academy of Advertising and the Council on Hotel,
Restaurant and Institutional Education (CHRIE) and is currently a member of
the Human Resource Directors Association. Before teaching full-time, she
spent 10 years in resort management.

Jeffrey
Schaffer Professor, Ph.D.
Virginia Polytechnic Institute and State University jschaffe@uno.edu
Dr. Schaffer has been retained as consultant by both domestic and
international clients related to policy issues concerning tourism
development and assessment. Furthermore, he has worked extensively
throughout Louisiana in all aspects of tourism and tourism related
activities. Recently, Dr. Schaffer was engaged in teaching international
tourism and marketing in Switzerland and presented a research paper on
Managerial Re-engineering to a meeting of international tourism and
hospitality educators in Vienna, Austria. He is a member of the Council on
Hotel, Restaurant and Institutional Education (CHRIE) and the Academy of
Management. During the ten years prior to beginning his academic career,
Dr. Schaffer was Vice President and General Manager of an internationally
recognized New Orleans hotel.

Sam
Rabinovitz Volunteer Teaching Associate
Sam Rabinovitz attended both Louisiana State University and the University
of New Orleans. He is a graduate of the Culinary Institute of America.
Rabinovitz worked in the food service industry for many years. He
eventually started his own business and now teaches Jewish cooking
principles for various religious schools and is an authority on Jewish
dietary laws. Upon retirement in 1989, Mr. Rabinovitz began as a volunteer
culinary consultant for the UNO HRT program.
