John A.
Williams Professor
and Director jawill14@uno.edu
Ph.D. Penn State University
Dr. Williams worked in the hospitality industry for seventeen
years managing both chain restaurants and independent
restaurants that included a Mobile Guide four-star restaurant.
He holds a Ph.D., Master of Science, Bachelors, and Associates
Degree, all from the Pennsylvania State University.
Prior to joining the University of New Orleans as Director
of the Lester E. Kabacoff School of Hotel, Restaurant
and Tourism Administration, Dr. Williams served as Director
of the Department of Hotel, Restaurant, Institution Management
& Dietetics at Kansas State University and as the Coordinator
of the Undergraduate Program at Virginia Tech.
Dr. Williams'
research in grant procurement and publishing are in the
human resource area. He has published refereed articles
in a number of journals that include the Journal of Hospitality
and Tourism Research, Journal of Management Development,
Journal of the American Dietetics Association, Journal
of Child Nutrition and Management, Journal of Foodservice
Business Research, Journal of Restaurant and Foodservice
Marketing, and Florida International Journal. His current
research involves the study of the success, plateau, and
derailment of management.

Harsha
E. Chacko Professor

Ph.D. University of New Orleans
Dr.
Chacko has been a UNO faculty member since 1982 and specializes
in hospitality and tourism marketing and management.
He has published articles in journals such as Tourism Management,
Journal of Travel and Tourism Marketing, and the Cornell
Hotel and Restaurant Administration Quarterly.
Dr. Chacko has been involved in several New Orleans area
tourism research projects including studies for the New
Orleans Convention and Visitor Bureau, French Quarter Festival,
Inc., the Louisiana Office of Tourism, and the New Orleans
Tourism Marketing Corporation.
Dr. Chacko has worked in the hospitality industry in India,
Egypt, the Caribbean, and the United States. He currently
belongs to the Hospitality Education and Networking Association,
the Travel and Tourism Research Association, and the Council
on Hotel Restaurant and Institutional Education (CHRIE).
He was a Fulbright Scholar in 1995-96 and has been reappointed
as a Senior Fulbright Scholar.

Bridget
M. Bordelon
Assistant Professor,

Dr. Bordelon’s
research interests include destination images and destination
marketing, urban tourism, cross-cultural perspectives
on tourism and travel, and the application of qualitative
and quantitative research methods.
Dr. Bordelon joined the Lester E. Kabacoff School
of HRT faculty in the fall of 2003.
She teaches courses in the area of tourism, which
include International Tourism, Tourism and Hospitality
Marketing, and Principles of Travel and Tourism.
She is a member of the Travel and Tourism Research
Association (TTRA) as well as the TTRA south central states
chapter, the American Anthropological Association (AAA),
and the Urban Affairs Association (UAA). Currently, Dr. Bordelon is researching and writing on how visual
media images affect visitors’ perceptions of travel destinations.

Chef Ricardo Fredricks
Chef/Teaching Associate, MS rfredric@uno.edu
Prior to joining the University of New Orleans, Chef Fredricks
was a Chef/Instructor for the Culinary Apprentice Program
at Delgado College. He has a M.S. degree from the
University of Wisconsin – Stout, Bachelors from the University
of New Orleans, is a graduate of the Culinary Institute
of America, and is certified by the American Culinary Federation
as a Certified Culinary Educator and Chef de Cuisine.
Chef Fredricks’ hospitality
industry career included working for hotels, restaurants
and resorts. Chef Fredricks is a member of the International
Food Executives, the Research Chef’s Association, the
Louisiana Restaurant Association (LRA) and the American
Culinary Foundation.

Yvette
Green, Associate
Professor, Ph.D.
Virginia Polytechnic Institute and State University

Dr. Green
has professional experience in restaurant management,
banquets and catering, and resort management.
She serves on the Board of Directors of the New Orleans
Chapter of the Louisiana Restaurant Association (LRA)
and the New Orleans Multicultural Tourism Network.
Dr. Green also holds memberships in the Council on Hotel,
Restaurant and Tourism Education (CHRIE) and the Club
Managers’ Association of America (CMAA).
Dr. Green has published in the Journal of Hospitality
and Tourism Research and has authored a textbook chapter
in the Hospitality and Tourism Management.
She has presented at several hospitality conferences and
published articles and abstracts in the proceedings of
these conferences. Her current research interest
involves studying the sales forecasting process and procedures
in the restaurant industry.

Pearlman
Assistant Professor, Ph.D.

Dr.
Pearlman has been involved with the travel and tourism
industry for about fifteen years. He has worked with Statistics
Canada, Michigan Economic Development Corporation, the
U.S. Forest Service, Disney, Choice Hotels, USAID, U.S.
Department of Defense and SPSS. He holds a Ph.D. from
Michigan State University a M.A from California State
University, Chico and a Bachelors Degree from San Diego
State University.
Prior to joining the University of New Orleans, Dr. Pearlman
served as Director of Research for the Chicago Convention
and Tourism Bureau. Additionally, he was Senior Associate
for Economics Research Associates and the Sr. Manager
for Business Strategy and Trends Analysis for Sodexho
Alliance.
Dr. Pearlman's research involves Sustainable Tourism Development,
Indoor Waterpark Resort Feasibility, Casino Revenue Estimation
Modeling, E-Commerce and Employee Turnover Reduction.
He has published refereed articles in a couple of journals
that include the Journal of Teaching in Travel and Tourism
and the Gaming Research & Review Journal. His current
research involves the study of Convention and Visitor
Bureau success, operations and measurement of effectiveness.

Kisang
Ryu Assistant
Professor, Ph.D.

Dr.
Ryu joined the Lester E. Kabacoff School of HRT faculty
in the fall of 2006. He teaches Introduction to HRT Administration,
Introduction to Conventions, Technology Tourism and Hospitality
Management for the fall semester of 2006. He is a member
of a variety of academic organizations, such as International
Council on Hotel, Restaurant, Institutional Education
(CHRIE), The Association of Hospitality Financial Management
Educators (AHFME), Korean Academic Society of Hospitality
Administration, and The Korea Academic Society of Tourism
and Leisure.
Dr.
Ryu's research interests include hospitality finance and
strategic management, hospitality information technology,
atmosphere, emotions, hedonic and utilitarian motivations,
application of theories, culinary tourism, foodservice
management, and research methodology and statistical applications.
He has published articles in a number of journals that
include the Journal of Hospitality and Tourism Research,
International Journal of Hospitality Management, Journal
of Hospitality Financial Management, Journal of Foodservice
Business Research, Korean Journal of Hospitality Administration,
and Nutritional Sciences. He received Best Conference
Paper Award (2nd place) and Best Paper Award Travel and
Tourism Area at 10th Annual Education and Graduate Student
Research Conference in Hospitality and Tourism in 2005.

Jeffrey Schaffer
Professor, Ph.D.

Dr. Schaffer has been retained as consultant
by both domestic and international clients related to policy
issues concerning tourism development and assessment. Furthermore,
he has worked extensively throughout Louisiana in all aspects
of tourism and tourism related activities. Recently, Dr.
Schaffer was engaged in teaching international tourism and
marketing in Switzerland and presented a research paper
on Managerial Re-engineering to a meeting of international
tourism and hospitality educators in Vienna, Austria. He
is a member of the Council on Hotel, Restaurant and Institutional
Education (CHRIE) and the Academy of Management. During
the ten years prior to beginning his academic career, Dr.
Schaffer was Vice President and General Manager of an internationally
recognized New Orleans hotel.
